This is a festive and totally plant-based take on the classic crumble, including blackberries and cranberries as well as apples.
The perfect dessert for after your Christmas dinner - and a definite crowd pleaser. Everyone loves a bowl of crumble, and it's a favorite on cold wintery nights as a warming dessert.
It's a fuss-free dessert - and the leftovers are even better. This recipe is perfect alongside some plant-based cream or custard. You can serve it as a teatime treat or as a pudding.
It's very easy to make and has very simple steps. If you don't have cranberries or blackberries, you can also use whichever berries you like or already have.
To make the recipe vegan, it calls for coconut oil instead of butter for the topping - which works just as well, and tastes just as good. The rest is pretty much exactly the same.
Adding oats to the topping gives a little extra crunch- the best bit! The cinnamon and cranberry adds a warming and comforting touch. Additionally, you'll get some fiber from the oats and fruit to help with digestion and prevent a sugar rush.
With the ever-growing list of things to do and things to buy- this can make your Christmas day lunch an easy win. You can prepare it in advance, so it frees up some precious time on the main day. Meaning it's already prepared to bake when you're ready for dessert. If you haven't eaten too much already!
You can make the crumble topping by hand- crumbling the mixture in your fingertips. Or, you can put the ingredients in a food processor or mixer, until it forms a breadcrumb like consistency.

Festive Crumble:
Serves: 4
Total time: 50 minutes
Ingredients:
Filling:
2 green apples
150g blackberries
3 tbsp dried or freeze dried cranberries (or any other berry)
1 tbsp coconut oil
1 tsp cinnamon
Topping:
100g flour
60g sugar or coconut sugar
60g coconut oil
1 tsp cinnamon
½ tsp cloves
3 tbsp oats
1 tbsp ground flaxseed
Method:
1. Preheat the oven to 350°F/180°C.
2. Core, peel and dice the apple and add to a saucepan with the coconut oil.
3. Cook over a low heat for 10 minutes.
4. Meanwhile, boil the kettle and pour 2 tbsp water over the cranberries in a small bowl. Set aside to rehydrate.
5. Mix the flour, cinnamon, cloves and sugar in a mixing bowl.
6. Add the coconut oil and rub the mixture together between your fingertips for a few minutes until you have a fine crumb.
7. Stir through the oats and flax and set aside.
8. Once the apple has softened, add the cinnamon, blackberries and cranberries, including the water and cook for another 2 minutes.
9. Tip the filling into a casserole dish and top with the crumble mix.
10. Cook for 20-30 minutes, until golden and bubbling.
