This snack is nutty, rich, decadent and sweet - but without the energy crash that you often feel after having a sugary snack. 

Each pistachio cacao ball is equipped with plenty of fiber and healthy fats to slow down the digestion of carbohydrates to provide a steady, prolonged release of energy. 

The protein and fat content will also help keep cravings and hunger at bay - preventing you from overeating and indulging in other foods.

Pistachio Cacao Energy Balls

Makes 9 energy balls

Prep time: 5 minutes 

Chill time: 1 hour

Ingredients:

100g pitted dates50g ground or whole almonds2 tbsp raw cacao powder2 tbsp peanut or almond butter1 tbsp coconut oil40g pistachios

Method:

1. Place the dates, almonds, cacao powder, coconut oil and almond butter in a food processor and blend until very smooth.

2. Finely chop the pistachios and spread out on a plate or shallow bowl.

3. Scoop out roughly 1 heaped tbsp of the mixture and roll into a ball using your palms. Then roll in the pistachios to coat. Place in an airtight container and repeat.

4. Store in the fridge and enjoy! They can be eaten immediately but are best after chilling for at least an hour.
